Recipe for Spaghetti Carbonara:

Ingredients:

  • 1 pound spaghetti
  • 6 ounces pancetta or bacon, diced
  • 4 large eggs
  • 1 cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)
  • Meat, chicken, shrimp (optional)

Instructions:

  1. Cook the spaghetti in a large pot of salted boiling water, according to package instructions, until al dente. Reserve 1 cup of pasta water before draining the spaghetti.
  2. While the spaghetti is cooking, cook the pancetta or bacon in a large skillet over medium heat until crispy. Remove from heat and set aside.
  3. In a large bowl, whisk together the eggs, Parmesan cheese, garlic, salt, and black pepper.
  4. Add the cooked spaghetti to the skillet with the pancetta or bacon and toss to combine.
  5. Remove the skillet from the heat and let it cool for a minute. Then, pour the egg mixture over the spaghetti and toss quickly to coat the spaghetti with the sauce. The heat from the spaghetti will cook the eggs.
  6. If the sauce is too thick, add some reserved pasta water, a little at a time, until it reaches your desired consistency.
  7. Serve immediately, garnished with fresh parsley, if desired.
